烟叶发酵调制后的烟叶经降解和氧化而改善其品质的过程。当烟叶被置于自然的或人为控制的环境条件时,由于自身内部的酶促与非酶促的降解和氧化反应(有时还有微生物参与),化学成分、物理特性将发生复杂变化。品质的提高主要表现在烟叶气息和燃吸时烟气中不愉快的生青气和杂气显著减轻以至消失,令人愉快的烟香不同程度地显露出来;刺激性和苦涩味减轻,烟味趋于醇和;燃烧性显著改善,阴燃持火时间延长,烟灰的白度提高;烟叶颜色转深,色泽趋于均匀,青色有不同程度减轻以至消失。广泛采用的发酵方法有陈化、堆积发酵和人工发酵。陈化 又称自然醇化,是将复烤(见烟叶复烤)后含水率约10~12%的烟叶,长时间(1~2年)存放在贮存条件良好的仓库内,借助烟叶内部的缓慢化学反应,达到提高烟叶品质的一种温和的发酵方法。对烟叶品质提高的效果很好,一般不致减弱其有利的品质因素。此法广泛用于烤烟和白肋烟,中国多用于优质烤烟。堆积发酵 将含水率较高的烟叶堆码成一定体积的烟垛,借助烟叶自热作用产生的热量,促进烟叶的化学变化,以提高烟叶品质。此法多用于雪茄烟、红晒烟等。人工发酵 将烟叶置于能控制空气温、湿度等条件的专用室内,通过较高的空气温度(通常为50℃)和适宜的相对湿度,促进烟叶在较短期内发生类似陈化过程中的化学变化,达到提高烟叶品质的一种快速发酵方法。但该法会发生减弱有利品质因素的情况。东欧诸国将此法多用于香料烟,中国从50年代起应用于烤烟。
