汾酒集团全称山西杏花村汾酒集团有限责任公司,1949年由国家出资后合并成为山西杏花村汾酒厂,2002年改制成山西杏花村汾酒集团有限责任公司。目前已发展成为生产销售白酒、保健酒为主,集贸易、投资、旅游、农业、体育等产业为一体的省属国有企业。

Fenjiu Groups full name is Shanxi Xinghuacun Fenjiu Group Co., Ltd., which was funded by the state and merged into the Xinghuacun Fenjiu Distillery in Shanxi in 1949. In 2002, it was converted into Shanxi Xinghuacun Fenjiu Group Co., Ltd. Fenjiu Group has now developed into a provincial state-owned enterprise that mainly produces and sells white liquor and health care wine, integrating trade, investment, tourism, agriculture, sports and other industries.

Fenjiu Group covers a total area of about 3 square kilometers and employs more than 11,000 people. It has five wholly-owned subsidiaries, 10 holding subsidiaries, and one branch company. Xinghuacun, also known as “City of Liquor”, is the origin of Fenjiu and Zhuyeqing Liquor that is one of the Chinas eight famous liquors. Xinghuacun has become an ancient city of wine culture as it wrote in the poems: “The Fenjiu in Xinghuacun is like a fountain.”, “Everywhere on the streets reveals the green curtain”. Fenjiu is a world -famous Chinese liquor with a long history. The archaeological discovery of the wine utensil, “the small mouthed peaked bottom bottle” , has traced the origins of the wine-making history in Xinghuacun back to Yangshao culture period of the ancient times, which has a history of more than 6,000 years. Fenjiu has been famous because of four stories in history. According to the existing textual information, it can be traced back to the stage of the Southern and Northern Dynasties. Fenjiu became famous for the first time because of being the imperial liquor. According to the official revision history of “ the Book of the Northern Qi Dynasty ·Biography of Kangshu , Royal Highness of Henan ” ,it says: “The emperor was in Jinyang City and wrote to his nephew living in Ye City, saying that‘I drink two cups of Fen Clear Lqiuor, and I suggest that you do it too’. That was how the emperor cared for his nephew. ” The emperor was Gao Zhan, also known as the Emperor Wucheng of Northern Qi Dynasty. In 563 A.D., he sent a letter from the alternative capital Jinyang to his nephew living in Ye city, and recommended Fen Clear Liquor, expressing his concern and affection for his nephew. Fenjiu had its fame for the second time due to its origin. In 830 A.D., Du Mu, the leading Chinese poet of the late Tang Dynasty, came to Xinghuacun and composed the poem “Qingming Festive”. The historic rhyme “Where can a wineshop be found to drown his sad hours? A cowherd points to a cot mid apricot flowers.” made Xinghuacun famous as the origin of Fenjiu, at the same time making Fenjiu a household name for thousands of years. Fenjiu’s third success is due to its debut on the international stage. In 1915, Fenjiu was awarded the only major medal of Chinese liquor brand in the Panama Pacific International Exposition, making it the model of China-made goods. From then on, Fenjiu has made its way from domestic to international. Fenjiu had its fourth success story because it became the state banquet liquor of the first national political consultative conference after the founding of the Peoples Republic of China. Since then, Fenjiu has been awarded the title of “Chinese famous liquor” five times at National Wine Tasting. In the same way, Zhuyeqing Liquor has been awarded the title of “Chinese famous wine” three times. These honors have make Fenjiu earn the official praises of the new China.

汾酒作为我国老四大名酒之一,是清香型白酒的典型代表。清香型白酒的国家标准,就是以汾酒为范本制定的。今年已经 109 岁高龄的酿酒泰斗秦含章老先生,上世纪六十年代曾主持研究“汾酒试点”,对汾酒的各项理化指标进行了系统分析,得出了汾酒“最纯净、最卫生”的结论。

(清香型酒独特工艺“清蒸二次清”:即酒醅的原料(高粱和辅料)都要进行清蒸处理,将蒸煮后的高粱拌曲(低温大曲)后放入陶瓷缸,缸埋入土中,发酵28天,取出蒸馏。蒸馏后的酒醅不再配入新料,只加曲进行第二次发酵,仍发酵28天,取出蒸第二次酒,其醅蒸后为扔糟。两次蒸馏得酒,经储存勾兑成汾酒。浓香白酒采用的是泥窖发酵,酱香白酒采用石窖发酵,但清香型白酒是使用地缸发酵的。所以虽然微生物种类上不如浓香酱香丰富,可是比较纯净卫生,杂醇油含量相对比较低。又比如,浓香酱香白酒的工艺里都有“回糟”工序,即酿酒原料会二次发酵。但清香型白酒的糟醅即用即弃,不会再用于继续发酵。)

In addition, there exists the skill of "Back to Pot Ale" in the process of making Luzhou-Flavor Liquor and Maotai-Flavor Liquor, that is, the raw materials of brewing will be secondarily fermented. However, In the process of making Fen-Flavor Liquor, the distilled liquor t are disposable and will not be used for further fermentation. )

汾酒的古法酿造工艺是我国首批非物质文化遗产,与此相对应的,汾酒现在也保存着全国第一家、也是唯一一家原址型白酒遗址博物馆——杏花村汾酒老作坊遗址博物馆。杏花村汾酒老作坊遗址博物馆可以追溯到宋代,至今已有800多年的历史,总占地面积9000平方米,是全国白酒老作坊中历史最悠久、保存最完整、遗存面积最大、组成要素最全、对白酒贸易影响最大的白酒遗址博物馆,被誉为是中国白酒行业的“日昇昌”。,杏花村老作坊遗址博物馆被评为国家级重点文物保护单位,又被列入世界文化遗产预备名单,被誉为中国白酒作坊的“活化石”。9月15日,位于山西省汾阳市杏花村东堡芦家街的汾酒老作坊遗址博物馆正式对外开馆。

It is worth mentioning that the site of this old workshop is still the most brilliant “witnesses” in the history of Fenjiu’s glories. 100 years ago, in 1915, the Fenjiu produced in this old workshop won the first class medal in the Panamanian International Exposition. In 1924, former Fenjiu inheritors applied for the registration of the first trademark of Chinese liquor industry—Sorghum Panicle Label; in 1930, Xinghuacun ancient workshop site became the largest liquor enterprise group company in China at the time; In the year of , the site of the ancient liquor workshop was rated as state-level key cultural relics protection units.
